Spray-Dried Coffee: The Conventional Method

Spray-drying is the more widely used and cost-effective method of producing instant coffee.

In this process, freshly brewed coffee is sprayed into a chamber of hot air. As the droplets fall, the water content rapidly evaporates, leaving behind fine coffee powder.

While this method allows for faster and large-scale production, the high temperatures involved often lead to:

· Loss of natural aroma

· Breakdown of delicate flavour compounds

· Increased bitterness in taste

As a result, the final cup may feel flat or harsh when compared to freshly brewed coffee.

Freeze-Dried Coffee: Preserving What Matters

Freeze-drying, on the other hand, is a more advanced and precise process designed to retain the original character of the coffee.

Here’s how it works:

· Freshly brewed coffee is first frozen at very low temperatures

· The frozen coffee is then placed in a vacuum environment

· Ice crystals are gently removed through sublimation, turning directly into vapour without passing through a liquid state

Because this process avoids high heat, it helps preserve:

· The coffee’s natural aroma

· Depth of flavour

· Smoothness and body
